Smoothie Lab

I’ve been hired to create a whole bunch of smoothie recipes. It’s a fun job. I get to play around in my kitchen like a mad scientist with all sorts of fruits, nuts, seeds, and other doodads, and put different combinations together until I get a hit. My Vitamix is getting a workout, that’s for sure!

One thing I’ve been working on is creating smoothies that contain vegetables, although the drinker shouldn’t necessarily be able to taste them (think veg-phobic kids). Here’s a recipe that’s not part of the official smoothie collection — it’s too radical! It secretly contains…beets! There’s also cocoa powder, frozen blueberries, and honey to distract your palate from the earthy flavor of beets. It tastes more like chocolate than anything else. Try it!

Blueberry Beet Smoothie

1/4 cup peeled beets, sliced

1 cup frozen blueberries

2 teaspoons cocoa powder

1/2 cup plain kefir

1 cup ice

1/4 teaspoon vanilla extract

1 tablespoon honey, or 4 pitted dates

Pinch of cinnamon

Steam the beets for 15  minutes, or until fork tender, and cool to room temperature. Combine all of the ingredients in a blender and blend until smooth.

    I usually use oranges and pears in my veggie smoothies,they have very dominent taste:D
